18K views · 2.5K reactions | I’d always request my mom to make her Filipino chicken curry. She packed it full of ginger, coconut milk and stewed the chicken until it was fall-off-the bone tender. Every time I’d ask her for the recipe, she never measured or timed anything so this was my best attempt at replicating what she would do. This version is very simple but that’s what I liked about it, just a warm comforting bowl of delicious food Ingredients 1.5 lb chicken party wings 2-3 tbsp cooking oil 1-2 carrots sliced 2 potatoes diced 1 inch knob ginger sliced 3-5 cloves garlic chopped 1 small onion diced 2 tbsp curry powder 1 tsp turmeric (optional) 1.5 cups chicken stock 1 can coconut milk 1-3 tbsp fish sauce Salt and pepper to taste 1. Over medium heat quickly brown potatoes and carrots in oil and set to the side (you can skip this step and just add to carrots and potatoes later) 2. In same pan, brown chicken 3-5 minutes and season with salt and pepper. Set aside. 3. Add in remaining oil and sauté onions, ginger and garlic until fragrant, 3-5 minutes. Add back in chicken and season with curry powder and turmeric. Let the chicken and spices sauté and pour in chicken stock. Scrape bits off pan and bring stock to a boil. 4. Add in coconut milk and bring to a boil again. Once boiling cover and set to low for 35 minutes. 5. After 35 minutes, stir and add in potatoes and carrots and cook 10 minutes. What’s not to love about a crispy breaded cheesy chicken cutlet that’s drizzled with a lemon butter??!! Recipe 1 lb chicken cutlets pounded thin 2 eggs 1/2 c milk 1 1/2 cups fresh white breadcrumbs 1/2 -3/4 c grated Parmesan 3 tablespoons fresh parsley chopped 1/4 teaspoon salt 1/4 teaspoon pepper 1 1/2 cups olive oil 4 tablespoons butter 4 tablespoons lemon juice Beat the eggs and milk in a shallow bowl. Mix the breadcrumbs with the cheese, parsley, salt and pepper. Dip each cutlet into the eggs then breadcrumbs to coat thoroughly. Heat the olive oil in a large skillet. When very hot fry the cutlets until golden brown on each side. Drain on paper towels. In a small saucepan melt the butter and stir in the lemon juice. We love it with baked potatoes, green salad, and corn on the cob. It’s kid-friendly and you don’t even have to fire up a grill. Now to make this oven baked BBQ chicken you’ll need only a few ingredients! pack of bone in chicken thighs and legs (~ 4lbs) Your favorite bbq sauce, I used @sweetbabyrayscatering BBQ seasoning blend (as much as you like, I used 4tbsp) Yellow mustarrrrdddddd Salt and pepper to taste 1/2 cup water to add to bottom of pan Coat chicken in mustard, which acts as binder and generously season your chicken. Add to baking sheet skin side down for thighs. Add in water to bottom of pan. Bake on 400 for 25-30 minutes. Flip the thighs over and baste chicken with juices. Cook for another 15 minutes. Next, brush the chicken with the first layer of bbq sauce. Bake for 10 minutes, add another coat, bake for 10, add one more coat and place chicken under broiler to make it nice and sticky. I’m telling you - you won’t even miss the grill! It’s creamy and delicious, warm & cozy, and can be served on its own, or over pasta, rice, or veggies! ⁣ Makes 4 servings⁣ 1 lb boneless skinless chicken breasts, 2 large breasts, sliced in half if thick ⁣ 1/2 tsp salt⁣ 1/2 tsp ground black pepper⁣ 1 tsp paprika⁣ ⁣ ½ cup sun-dried tomatoes, drained and chopped, reserving 3 tb of the oil⁣ 1 small yellow onion, finely diced⁣ 3 cloves garlic, mashed⁣ 1 tb Italian seasoning ⁣ 2 tsp dijon mustard⁣ 1 1/4 cups full-fat coconut milk OR heavy cream⁣ 1 tb corn starch or tapioca or arrowroot, if you want a thicker sauce (optional)⁣ 2 cups fresh spinach ⁣ 3/4 cup freshly grated parmesan cheese⁣ chopped parsley to garnish⁣ ⁣ Season chicken on both sides with salt, pepper, and paprika.
