This recipe combines two of my favourite things, carbonara and risotto. The arborio rice together with the eggs and guanciale creates a creamy, comforting dish that’s packed full of flavour. All the traditional carbonara elements are here to produce the risotto you didn’t know you needed! Spinach & Ricotta Gnudi
Have you ever heard of Gnudi? Naked ravioli? They cook in about 4 minutes and the preparation is very simple. I have served them with butter, sage, and lemon sauce but they can also be served in a simple tomato sauce. However you are going to serve them, gnudi are a great first course! Before cooking them, keep them in the fridge on a bed of semolina for at least 1 hour so they hold their shape well when cooking. You can also make them in advance as they keep well in the fridge for a few days.

This recipe comes from Liguria in the north of Italy (the home of pesto Genovese!) and is made up of layers of pasta, homemade basil pesto and a creamy béchamel sauce. Then it's topped with extra cheese so that it forms a beautiful golden crust in the oven. Fresh basil pesto should never be cooked to preserve the freshness and aroma of the basil but this recipe is the one exception. Baking it together with the béchamel and pasta creates a delicious combination but in a way that still preserves the essence of the basil, resulting in a rich and flavourful dish.

Slice and rise your potatoes until the water runs clear. Pat dry. 2. Clean your shrimps to your liking, I like mine shell on so I cut off the top half of the head + sharp tail ends + legs 3. Devein shrimp and season with little salt and chicken bouillon 4. Mix the batter ingredients together 5. Add the potatoes to the batter, mix 6. Heat up your oil to 350F 7. Layer some potato on a spoon and dip your shrimp into the remaining batter. Add it on top and fry for 4-6 mins flipping half way until golde
