· 2 servings Ingredients for Basil Vinaigrette: • 1 cup fresh basil leaves, loosely packed • 1 clove garlic • 1 tbsp chopped shallot • 2 tbsp white balsamic vinegar (or white wine vinegar) • ¼ cup olive oil • ½ tsp honey • Pinch salt Ingredients for Salad: • ½ (5 oz) container baby arugula • 1 large or 2 small peaches, thinly sliced • 1 cup strawberries, sliced • 4 oz burrata • ¼ cup almonds (I use Marcona almonds) • Basil Vinaigrette, to taste • Coarse sea salt
