8-10 rice paper sheets 1 cup shredded carrots 1 cup shredded cabbage 1/2 cup sliced bell peppers 1/2 cup sliced cucumber 1/4 cup chopped cilantro 1/4 cup chopped mint 2 tbsp soy sauce 1 tbsp sesame oil 1 tbsp rice vinegar 1 tsp maple syrup 1 tsp grated ginger 1 clove garlic, minced Salt and pepper Mix veggies and herbs. Whisk soy sauce, sesame oil, vinegar, syrup, ginger, garlic, salt, and pepper. Toss with veggies. Soften rice paper in warm water. Fill and roll rice paper.
