若想到做面包,就非这个马玲薯面包食谱莫属, 直接法,面包2-3后还是软的 :) 满足 :) 食谱取自~蓝赛珍老师的我会烘焙一书~ 材料: 350g高粉 1/2小匙盐 2大匙奶粉 1tsp 茶匙干酵母 70g糖 150g水煮马铃薯,去皮,压成泥备用 1颗蛋(我用50g左右) 80ml水(煮马铃薯剩下的水) 75g奶油(我用60g) 做法: 1。除了奶油,将全部材料搅拌成团,具有筋性。 2。加入奶油,搅拌至完成阶段(成薄膜状) 3。基本发酵60分钟。 4。取出,排气滚圆,间中松弛10分钟。 5)整形,放入烤模,再让面团发酵50分钟。 6)扫上蛋液或鲜奶,以180度烤约12至15分钟 (我用150度 23分钟 Morgan 42L 烤炉)
