Whitney McGee on Instagram: "Easy enough for a weekday, impressive enough for the weekend. I got this recipe years and years ago from my mother-in-law. It is one of our absolute favorites. You can use any fruit you want, fresh or frozen. Our favorites have been apple, peach and blueberry. ✨ Puff Pancake ✨ Ingredients: 7 eggs 1 1/2 c milk (nut milk works too) 1 c flour 3 T sugar 1 t vanilla 1/2 t salt 1/4 t cinnamon 1/4 c butter 1 cup fruit (or 2 apples) Directions: * preheat oven to 425. * Melt butter in a 13 x 9 glass dish in the oven. Once melted, while pan is still in the oven, add the fruit until butter starts sizzling again * While your fruit is softening and butter, melting, mix up the remaining ingredients using an immersion blender. * Poor batter over fruit. Bake in the oven

Ingredients:

 •  2 teaspoons unsweetened gelatin powder
 •  1/4 cup cold water (to bloom the gelatin)
 •  3/4 cup boiling water
 •  1 cup Greek yogurt (high-protein, low-sugar variety)
 •  1 tablespoon almond butter (or any nut butter of choice)
 •  1 teaspoon vanilla extract
 •  1/2 cup mixed berries (such as strawberries, blueberries, and raspberries), plus extra for topping
 •  A sprinkle of cinnamon (optional for added flavor)
 •  A drizzle of honey or pure maple syrup (optional, use sparingly)
