Crispy Chickpea & Hot Honey Halloumi Salad
INGREDIENTS ▪️300g halloumi, cubed ▪️2 tbsp hot honey ▪️1 tsp chilli flakes ▪️570g chickpeas ▪️1 tsp paprika ▪️1/2 cucumber, finely chopped ▪️3 beef tomatoes, finely chopped ▪️1/2 red onion, finely chopped ▪️1 yellow pepper, finely chopped ▪️Large handful of coriander, finely chopped Dressing ▪️Juice of 1 lemon ▪️1 tbsp honey ▪️2 tbsp extra virgin olive oil ▪️Salt and pepper to taste Method: Sauté halloumi with hot honey & chili flakes until golden. Roast chickpeas with oil, salt & paprika at 200°C for 30 min. Whisk dressing ingredients. Chop veggies & coriander. Mix everything in a bowl, add dressing, toss & serve. Loaded Potato Soup 📝 Recipe for 4 servings 400 g potatoes, diced 1 onion 1 stalk of celery 2 tbsp flour 1 tbsp vegan butter 250 ml vegan cream 250 ml oat milk 400 ml vegetable stock 1 handful of sprinkled cheese, vegan 1 level tsp each: salt, pepper, nutmeg, paprika Tofu: 400 g smoked tofu 1 tsp paprika powder 1 tbsp agave syrup Toppings: Spring onions chili flakes Preparation: 1. Dice the smoked tofu and sauté. Season with agave syrup and paprika powder and set aside 2. Sauté the onions and celery 3. Add the flour, butter, soy milk and cream and bring everything to the boil while stirring 4. Add the potatoes and vegetable stock and simmer for 7 minutes 5. Stir in the sprinkled cheese and season. Enjoy with smoked tofu and other toppings
