Cheesy Enchilada Chili
Cook Meat: In a large pot or Dutch oven, cook ground beef (or turkey) and onion over medium heat until browned. Drain excess fat if necessary. Add Base Ingredients: Stir in beans, diced tomatoes, enchilada sauce, broth, corn, chili powder, cumin, garlic powder, salt, and pepper. Simmer: Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally. Add Cheese: Stir in cheddar and Monterey Jack cheese until melted and creamy. Serve: Ladle chili into bowls and garnish with sour cream, green onions, or tortilla chips if desired.
Cheesy Enchilada Chili Recipe
Ingredients: 1 lb ground beef, 2 tbsp taco seasoning, ¼ cup water, 1 jar Tostitos Salsa Con Queso, 1 can potato soup, 1¼ cups sour cream, 1 can fire-roasted diced green chilis, 1¼ cups beef broth, ½ cup chicken broth, 1 cup frozen corn, 1 cup pinto or black beans. Instructions: Brown ground beef, drain grease, and season with taco seasoning and water. Transfer to a large pot; mix in salsa, potato soup, sour cream, beef broth, and chicken broth. Add chilis, corn, and beans. Bring to a boil, then simmer while stirring. Serve with tortilla chips and your favorite toppings.
