Los - Sweet Potatoes with Burrata, Roasted Beets, and Walnut Sage Pesto 🍠🧀 This vibrant dish is a blend of creamy burrata, earthy roasted beets, and a fragrant walnut sage pesto — perfect as a side or a light main! Ingredients: 2 large sweet potatoes, sliced 2 medium beets, peeled and cut into wedges 2 tbsp olive oil Salt and black pepper, to taste 1 ball burrata cheese 1/2 cup walnuts, toasted 1/4 cup fresh sage leaves 1/4 cup grated Parmesan cheese 2 garlic cloves 1/3 cup olive oil 1 tbsp lemon juice Instructions: Preheat your oven to 400°F (200°C). Toss sweet potato slices and beet wedges with olive oil, salt, and pepper. Roast for 25–30 minutes until tender.
