You could eat it for breakfast or as a power-packed snack to get you through the day.  Add a sheet of rice paper to a non-stick skillet on the lowest heat.  Optional: add a dollop of chill oil ; then crack in two eggs in the centre and gently whisk , spreading it evenly across the rice paper to the edges.  Grate lots of cheese on top, followed by spring onions, sesame seeds  and your choice of garnishes/ toppings on top   Once the egg has almost set drizzle on some mayonnaise and hot sauce of choice.
