This is one of my favorite Soups because by definition, it is literally just using leftover veggies to make a soup.

Minestrone is one of the oldest Italian recipes on record. It is thought to be in the original Apicius cookbook, De Re Coquinaria, as Polus. It is possible that the idea of Minestrone is as old as BC.

The recipe has changed so much over time. It originally didn't have any tomatoes in it because tomatoes didn't get to Europe until the 16th century. But being another vegetable, it was quickly added into the recipe when tomatoes were available.

This will always be a go to soup in the fall for me because I always have some kind of leftover vegetables available!

⅓ cup olive oil
