Crust:
- 1/2 tsp cinnamon 
- 1 cup pecans
- 2 cups Graham crackers 
- 8 tbsp unsalted butter (melted)

Filling:
- 2 tsp pumpkin pie spice
- 40 Oz cream cheese (room temperature)
- 1 cup sugar
- 1/2 tbsp vanilla 
- 5 eggs (room temperature)
- 1/2 cup Greek yogurt
- 1/3 cup all purpose flour 
- 1 cup pumpkin puree (bake a small pumpkin at 400F for 35-40 minutes or until tender, remove as much liquid as you can)
- Blend until smooth. 

Place parchment paper in a 9” spring foam pan.
Bake at 325F for 80-100 minutes in a water bath (depends on your oven- check internal temperature to make sure the cheesecake is done). 

 Place in the fridge overnight.
