▪️2 large sweet potatoes ▪️2 eggs ▪️1/4 cup milk ▪️1 spring onion, chopped ▪️1/2 red pepper, finely chopped ▪️Handful of feta cheese ▪️Preheat oven to 200c ▪️Wash and dry your sweet potatoes. ▪️Prick them all over, and brush with some oil. Bake for 45-50 minutes until soft/air fry for 25 minutes/microwave. ▪️Remove from oven and let them cool ▪️Beat 2 eggs and mix with the milk ▪️Slice sweet potatoes in half, and gently mash the potato and form a well. ▪️Season with salt and pepper.
