1 cup full fat coconut milk 1 cup almond milk 2 tbsp maple syrup (or a few dates) 1/3 cup pumpkin puree 1/2 cup chia seeds 1 tsp pumpkin pie spice 1 tsp vanilla extract Pinch of salt Blend everything except the chia seeds. Add the chia. Blend briefly to combine. Pulse every 2-3 minutes until the chia seeds stay evenly mixed and don’t settle to the bottom. Refrigerate overnight. Top with yogurt and eat!
