Creamy Alfredo Broccoli and White Beans One Pot Meal
You’ll need: 1-2 cups of broth of choice 3 cups of broccoli florets 2 jars (or cans) of cannellini beans, drained and rinsed 1 jar of alfredo sauce Salt and pepper, if needed 1. In a large skillet over medium heat, add 1 cup of broth and your broccoli. Cover and steam for 5 minutes. Remove lid- if broccoli has absorbed all of the liquid then add another extra splash. 2. Stir in your beans and alfredo. Simmer for 10 minutes; depending on how saucy you want your final result to be you can add more broth as needed. Season with salt and pepper if needed; serve and enjoy!

1hr 30min · 4 servings Recipe: • -1 cup (130g) cashews • Boil them in water for 30mins. • Else: • -3/4 cup (180ml) water • -1/2 lemon, juiced • -1 Tbsp olive oil • -1 Tsp salt • -3 Tbsp nutritional yeast • -3 Tbsp corn starch • Blend until creamy. • Heat up whilst stirring until thickened (~3-4mins). • Transfer to a baking dish and refrigerate at least 1 hour. • Cut into sticks and fry them in oil. • Optional glaze: • -a handful thyme • -2 Tbsp maple syrup • -1 Tbsp lemon juice • Stir and spoon over the pan fried halloumi. • Enjoy ☺️
