Zutaten : 300 g Spinat (frisch) 250 g Feta oder Hirtenkäse 300 g Mehl 1 Teelöffel Backpulver 2 Eier 60 ml Olivenöl 250 ml Milch Salz, Pfeffer Zubereitung: Den Spinat kurz in kochendes Wasser geben. Eier, Milch, Olivenöl und Spinat verrühren und würzen. Mehl, Backpulver und 1 TL Salz mischen. Die Mischung langsam zur Spinatmischung geben. Den Feta klein schneiden und unterheben. Muffinformen einfetten und den Teig aufteilen. Bei 180 °C Umluft 15 bis 20 Minuten backen.
