On a hot comal roast the peppers then place them in a plastic bag so it’s easier to peel. 2. Peel the peppers and take the seeds out. 3. Stuff the peppers with the cheese. (To close them you can use wooden toothpicks) 4. Separate the egg whites and yolks. In a medium bowl add the egg whites, with a hand mixer mix on medium speed for 1 minute then increase the speed to high for 3 minutes. Once it’s done you will be able to flip the bowl without the egg whites mixture falling. Then slowly add the yolks and mix on medium speed for 1 minute and add salt. 5. Heat up oil. 6. Coat the stuffed peppers with flour then dip into the egg mixt
