Schnell, gesund und voller Geschmack – unser 10-Minuten-One-Pot-Wunder mit Mie-Nudeln, knackigem Gemüse und cremiger Kokos-Erdnuss-Sauce. Perfekt für den Feierabend! 🥢🌱 Zutaten (für 2 Personen): 100 g Vollkorn-Mie-Nudeln 1 kleine Zwiebel, fein gewürfelt 1 Knoblauchzehe, gehackt 1 kleine Möhre, in dünne Stücke geschnitten 100 g Brokkoli (in kleine Röschen) 50 g rote Linsen 1/2 Stange Lauch, in Ringe geschnitten 1 EL Erdnussmus 200 ml Kokosmilch 200 ml Wasser 1 TL Currypulver 1 Prise Chili (nach Geschmack) Frischer Koriander zum Garnieren Salz & Pfeffer nach Geschmack Zubereitung: Alle Zutaten in eine große Pfanne oder einen Topf geben. Zum Kochen bringen, gut umrühren und bei mittlerer Hitze ca. 10 Minuten köcheln lassen, dabei gelegentlich umrühren. Mit Koriander servieren.
