When the opportunity came for me to bake for a local coffee shop, we turned the room into a home bakery. In our county in southeast Missouri, you have to have a separate, inspected kitchen in order to sell your baked goods for resale. No license or inspection is needed to sell directly to the customer. What we needed to have in the commercial kitchen to pass inspection: 🧁3 basin sink 🧁Handwashing sink 🧁Doors to keep the bakery separate from other rooms in the house 🧁Wipeable walls 🧁Everything 6 inches off the floor 🧁Refrigerator and freezer with proper temperature control 🧁An overall clean environment It costs $120 to get a permit for the year. The health inspector comes once a year and has to let us know when she is coming (and I have to be home). She also tests my water for bacteria every year since we have our own well. Things we have added to the bakery since 2016 as the budget allowed: 🍪Cookie cutter pegboard 2021 🍪Stainless steel shelves and tables 2023 🍪Drying rack on the wall 2024 🍪Cabinets 2018-painted and remodeled 2024 🍪Cookie Sheet Rolling Cart 2024 🍪Commercial Oven 2024 I know this is not possible for everyone, but it has also helped us to be able to sell higher-risk foods like cream pies and cream cheese based desserts. There are a handful of other home bakers in our area that also have commercial kitchens in their homes (or on their property).
